Nauryz kozhe is a broth that tends to be consumed in new year celebrations in Kazakhstan, the world’s largest landlocked country.

Made with meat, kefir, rice, barley and noodles, the soup is meant to usher in good luck because it is considered a symbol of wealth and richness in the coming year.

The recipe is one of 60 carried in the brand new Mealtimes With My Maritime Friends cookbook, a project helmed by Edwin Lampert, executive editor at Riviera Maritime Media, marking the third book published by his charity, the Brun Bear Foundation, established in memory of his father.

“The recipe book was created to celebrate and give back to the maritime industry I’ve had the pleasure and privilege to be a part of for the last 25 years,” Lampert tells Maritime CEO.

All royalties will support charitable causes, including the newly established MarineBear Award. This will be awarded annually to support an individual or project using technology to address a marine conservation challenge.

Food is a bridge between cultures, memories and communities

“I’ve always been more of an eater then a cook,” Lampert says, though working in restaurants during his student years gave him what he describes as a “profound respect” for culinary professionals.

“I believe food is so much more than fuel — it is a bridge between cultures, memories and communities,” Lampert says.

Mealtimes With My Maritime Friends features 60 recipes from regions including the Middle East, Asia, Oceania, South America, Africa, Central America, Europe, and the United States, reflecting the international nature of the shipping industry. The book has been organised across 11 chapters which span the gamut of breakfast, soups, meats, fish, vegetarian dishes, sharing platters and desserts.

Other exotic examples to go alongside the Kazakh contribution include Fijian white fish ceviche, nettle pie, a Vanuatuan dish, and Marshallese donuts. To ensure the recipes are as accessible and inclusive as possible, each recipe comes with detailed nutritional information and allergen declarations.
